Drain and rinse the chickpeas thoroughly. For ultra-smooth hummus, remove the skins by gently rubbing them between your fingers. This step is optional but results in creamier hummus.
In a food processor, combine tahini and lemon juice. Process for 1-2 minutes until the mixture is whipped and creamy. This creates the perfect base for smooth hummus.
Add the minced garlic, ground cumin, and salt to the tahini mixture. Process for another 30 seconds until well combined.
Add half of the chickpeas to the food processor and process for 1 minute. Scrape down the sides and bottom of the bowl, then add remaining chickpeas and process until thick and smooth, about 2 minutes.
With the processor running, slowly drizzle in the olive oil and cold water. Process until the hummus reaches your desired consistency. Add more water if you prefer it thinner.
Taste and adjust seasoning, adding more salt, lemon juice, or garlic to your preference. Process again briefly to incorporate any additions.
Transfer hummus to a serving bowl. Create a shallow well in the center and drizzle with olive oil. Sprinkle with paprika and garnish with fresh parsley if desired. Serve with pita bread or fresh vegetables.
